No meat? No big deal! There are plenty of meals to cook up that are easy, tasty and filling! Going meatless doesn’t have to mean sacrificing flavor. Below are nine of my favorite ways to cook meatless meals that are also delicious.

1. {Falafel Sliders} I love how a few simple ingredients can be blended together to create a dish that is bursting with flavor. These are a personal favorite of mine. You can serve them with Israeli salad, hummus, tahini and crumbled feta as a salad, stuff them inside pita or as sliders on a bun.

2. {BBQ Cauliflower Poppers} If you are craving chicken nuggets, get your fix with these crispy bbq cauliflower poppers.

3. {Tofu Stir Fry} This easy stir fry is ready in minutes and will have you licking your plate clean. You can swap mushrooms for green beans, asparagus, broccoli or your choice of vegetable.

4. {Spiced Salmon with Cilantro Lime Sauce} Spiced salmon is my favorite no fuss way to serve salmon. I know without fail it will turn out great so it’s the perfect dish to cook up on a busy weeknight.

5. {Spinach Quinoa Patties} Two power ingredients in one tasty patty!

6. {Tomato Olive Sauce with Zucchini Noodles} This meal is meat free, grain free and dairy free! Twirl them zucchini noodles around that fork and enjoy it one guilt free bite at a time!

7. {Broccoli Cheddar Bites} I’m all about the broccoli cheddar combo, as you may remember from my Broccoli Cheddar Latkes found HERE. I adore all things mini and love nothing more than a great tasting perfectly sized appetizer.

8. {Tofu Parmesan} I have always loved the idea of crispy chicken layered with melted cheesed and sauce, however since mixing meat and cheese is not Kosher I have to improvise and came up with this dish. Crispy coated tofu topped with cheese and marinara with a dusting of parmesan. I have never tasted the real thing but this dish definitely satisfied this Kosher girl’s craving.

9. {Creamy Pesto Tortellini with Artichokes} While many enjoy all things dairy during the nine days, many are not able to indulge due to allergies or being lactose intolerant. Here is a fantastic creamy sauce to enjoy without any heavy cream or cows milk! It’s dairy free and delicious.
