Easy 4th of July Desserts | Red, White & Blue Treats
Classic Vanilla Cupcakes with Red, White & Blue Frosting:
Ingredients for Cake:
2 eggs
1 teaspoon vanilla extract
1 and 1/3 cup of sugar
1/2 cup of oil
1 cup of orange juice
2 cups of flour
3 teaspoon baking powder
1 teaspoon salt
Ingredients for Buttercream:
1 stick of margarine, softened to room temperature
3 cups powdered sugar
2 tablespoons of water
1 teaspoon vanilla extract
red and blue food coloring
In a large bowl, cream the margarine until smooth and fluffy. Gradually add powdered sugar mixing well after each addition. Add water and vanilla until fluffy and frosting is spreadable. Divide frosting batter into three small bowls. Tint one bowl with red food coloring, one with blue and leave the third bowl white.
Directions:
1. Combine eggs, vanilla together, sugar, oil and orange juice.
2. Add flour, salt and baking powder.
3. Using an ice cream scooper, fill up cupcake liners.
4. Bake on 350′ for about 20 to 23 minutes.
5. Allow to cool off before frosting with vanilla buttercream. (alternating classic white with blue and red frosting)
6. Line up on a tray to resemble the American flag.

Vanilla Yogurt Popsicles with Blueberries & Strawberries
Combine vanilla yogurt with blueberries, raspberries and diced strawberries. Freeze in popsicle molds or cups.

Puff Pastry Fruit Cups with Whipped Cream
Bake puff pastry cups then fill with whipped cream, blueberries and raspberries.

Smoothie Cups in Bright Red & Blue
Make blue and red smoothies, then freeze in cups with a popsicle stick. Optional, top each cup with whole fruit before freezing. For blue smoothies, use crushed ice and fresh or frozen blueberries for the base optional add lemonade. For the red smoothie, use crushed ice and fresh or frozen strawberries or raspberries (or a combo of both!)
