Tofu Stir Fry


8 oz sliced mushrooms
12 oz extra firm tofu, cut into cubes
1/4 cup honey
1/4 cup soy sauce
1/4 cup water
1 T corn starch

Heat up a large frying pan with 1 T oil. Add mushrooms and cook until soft and browned. Add cubed tofu to pan. Heat up. Combine soy sauce and honey then add to pan. Combine corn starch and water then move mushrooms and tofu to side of pan creating a well. Pour corn starch mixture in well and swirl over medium flame until sauce thickens. Once thick combine everything together. Serve with freshly chopped scallions.
