Classic Creamy Spinach Lasagna
This easy-to-make spinach lasagna features layers of tender lasagna noodles, a creamy spinach and cheese filling, and a rich, flavorful tomato sauce. It’s a comforting and satisfying dish that’s perfect for feeding a crowd.
Ingredients:
9 lasagna noodles
1 tablespoon olive oil
1 onion, finely chopped
3 cloves garlic, minced
10 oz frozen chopped spinach, thawed and drained
15 oz ricotta cheese
1 cup shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 egg
1 teaspoon dried basil
1/2 teaspoon dried oregano
Salt and black pepper to taste
1 (24 oz) jar marinara sauce
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Cook for 3-4 minutes, stirring frequently, until the onion is translucent.
4. In a medium bowl, combine the drained spinach, ricotta cheese, 1/2 cup of the mozzarella cheese, Parmesan cheese, egg, dried basil, dried oregano, salt, and black pepper. Mix well until fully incorporated.
5. Spread 1/2 cup of the marinara sauce in the bottom of a 9×13 inch baking dish.
6. Lay 3 lasagna noodles in the dish, slightly overlapping them. Spread half of the spinach and cheese mixture over the noodles, then top with 1 cup of the marinara sauce.
7. Repeat the layer of 3 lasagna noodles, the remaining spinach and cheese mixture, and 1 cup of the marinara sauce.
8. Top with the final 3 lasagna noodles and the remaining marinara sauce. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.
9. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is melted and bubbly.
10. Let the lasagna cool for 10-15 minutes before cutting and serving. Enjoy your delicious Creamy Spinach Lasagna!
