Cheesy Mushroom Pasta

1 tbsp olive oil 

4 cloves garlic chopped 
8 oz button mushrooms sliced 
1/2 cup vegetable broth 
1 lb penne pasta
2 tbsp mustard
2 cup whipping cream

1 package 8 oz cream cheese 
1/2 cup walnuts
1 tbsp chives chopped


  • Heat oil in large skillet with mushrooms and garlic saute for 4 minutes until tender
  • Add the vegetable broth and boil until mixture reduces by half (5 minutes)
  • Cook pasta according to package and drain
  • Add mustard and cream to mushroom mixture 
  • Cook and stir over high heat until sauce thickens (2 minutes)
  • Reduce heat to low 
  • Add the pasta & walnuts to cream cheese mixture
  • Stir gently to combine 
  • Garnish with chives and serve hot
