Beet Hummus Pizza with Goat Cheese, Mozzarella & Arugula
Now that cooking with beets is easy (thanks to Gefen organic whole peeled cooked ready to eat red beets that are KOSHER!) the possibilities are endless. After making a delicious batch of Beet Hummus I knew I had to use it on something other than just pita chips. I was making my son pizza using frozen pizza dough when I realized I could smear the beet hummus on the dough in place of sauce then top it with some good stuff. The question became what good stuff could I top it with? My favorite beet dish is a great salad from Basil Pizza & Wine Bar in Crown Heights, Brooklyn. It’s got diced beets, crispy coated goat cheese and arugula. I decided that was going to be the good stuff going on top of my beet hummus pizza! I layered sliced goat cheese (minus the crispy coating since I wanted it super creamy) and shredded mozzarella before baking it till the dough was crispy and the cheese had melted then I topped it with baby arugula before serving. IT WAS DELICIOUS! I had to make several batches before I could get photos since my husband and I kept eating them. (it was lunch we were hungry and it was good we couldn’t resist)
Beet Hummus (recipe found HERE)
Goat cheese, sliced into thin rounds
Spread beet hummus on pizza dough. Top with sliced goat cheese. Layer shredded mozzarella on top. Bake in oven on 350′ for 10 to 12 minutes or until cheese melts. Remove from oven then top with baby arugula.
