VEGAN Heart Cookies with Jam Filling (Heart Pop Tarts!)
2 T ground flax seed combined with 6 T water
1/2 cup oil
1 t vanilla extract
2/3 cup sugar
2 t baking powder
2 1/2 cups flour
1 cup raspberry Jam (or your fav flavor!)
Dark chocolate, melted for drizzling on top
Sprinkles for decorating (optional)
Cream together flax seed water mixture, sugar, oil, and vanilla. Slowly add flour and baking powder. Mix together. The dough might be crumbly, use your hands to smooth it out and combine it. Roll out dough on floured surface (about 1/4 to 1/8 thick. Not too thick since then the circles are hard to shape and will open up. Not too thin since then it will rip when shaping or filling) and cut out hearts or circles using cookie cutters. Fill center of heart or circle with jam. (about 1/2 tsp each) then place a popsicle stick in the center and cover with another heart or circle on top so it sticks together. Using a fork crimp the edges down all around. and bake on 350′ for about 8 minutes. Once cookies have cooled off, melt chocolate and drizzle over cookies then top with sprinkles. I melt my chocolate in the microwave on 30 second increments until melted.
Tips & Tricks: Skip the sticks and simply make pop tart like cookies!
