Save this easy back-to-school dinner!

These crispy baked salmon nuggets are healthy, kid-friendly, and ready in under 20 minutes. Made with fresh salmon and a crunchy corn flake coating, they’re baked (not fried!) and taste amazing with a creamy dipping sauce.

Ingredients
1 lb salmon, cut into bite-size chunks
1 cup mayo
1 tsp Dijon mustard
2 cups crushed corn flakes (or half corn flakes, half panko)
½ tsp salt
¼ tsp black pepper
½ tsp paprika (optional, for flavor boost)
Cooking spray

Directions
1. Heat oven to 400°F. Grease a large baking sheet.
2. Combine mayo and mustard in a bowl. Add salmon pieces and coat well.
3. In another bowl, stir together corn flakes, salt, pepper, and paprika.
4. Roll salmon pieces in crumb mixture.
5. Place on baking sheet, spray lightly with cooking oil.
6. Bake 15–18 min until golden and cooked through.
7. Squeeze a little lemon over the top before serving with dipping sauce. (optional but delicious).

Dipping Sauce:
Main Dipping Sauce (Fry Sauce)
2 parts mayo
1 part ketchup
Tiny splash of pickle juice or vinegar

Mix until smooth.

Optional Sauces

* Spicy Creamy Sauce: Mayo + ketchup + dash of hot sauce + garlic powder
* Thousand Island–style: Mayo + ketchup + sweet relish + squeeze of lemon
* Creamy Dill Sauce: Mayo + lemon juice + dill
