EASY Dairy-Free Chocolate Fudge Brownies (One Bowl, No Fuss)
This recipe calls for an 8×8 baking dish, if you want a larger recipe and would like to bake it in a 9×13 pan, simply double the recipe.

Ingredients:
1/2 cup (120ml) vegetable oil or melted coconut oil
1 cup (200g) sugar
2 large eggs
1 tsp vanilla extract
1/3 cup (35g) unsweetened cocoa powder
1/2 cup (65g) all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
(Optional but highly recommended): 1/2 cup dairy-free chocolate chips or chopped dark chocolate
Instructions:
1. Preheat oven to 350°F (175°C).
2. Grease or line an 8×8-inch pan with parchment paper.
3. Mix wet ingredients: In a bowl, whisk together oil, sugar, eggs, and vanilla until smooth and slightly glossy.
4. Add dry ingredients: Stir in cocoa powder, flour, salt, and baking powder. Mix until just combined (don’t overmix).
5. Add chocolate chips (optional but in my opinion, a must!) Fold them in now if using for extra gooey-ness.
6. Pour and bake: Spread batter evenly in the pan. Bake for 25–30 minutes, until the edges look set and a toothpick in the center comes out with moist crumbs (not wet batter!).
7. Cool & devour: Let cool in the pan for 10–15 minutes before slicing for max fudgy texture.
Tips:
– For extra rich flavor, use Dutch-process cocoa.
– Want them chewier? Stick to the shorter baking time.
– Store in an airtight container at room temp for 3–4 days (or freeze for up to 2 months).
