Aunt Amalie’s Potato Salad

6 medium sized red potatoes -boiled, peeled and cut into medium sized pieces
2-3 pickles
2 hard boiled eggs
2 carrots
1/4 pound salami( either beef or turkey)
1/2 cup mayonnaise
salt and pepper to taste

Place potatoes in a large bowl. Shred carrots, pickles, and eggs in that order.Then add to potatoes. Cut salami into small pieces. Add to the bowl. Mix the mayonnaise with 2-3 tablespoons of pickle juice, salt and pepper. Pour dressing over potatoes plus in the bowl and stir to coat. It is better if you refrigerate for a few hours or overnight and then add make and add more dressing.
