Summer Grilling with Chef Dean Sheremet {Salmon with Balsamic Glaze & Strawberry Salsa}

I had the pleasure of cooking with Dean Sheremet and it was a blast. Mostly because I didn’t actually cook a thing! I watched him whip up Salmon with Balsamic Glaze & Strawberry Salsa and all I had to do was EAT IT! It was delicious and the perfect quick and tasty summer dish. Recipe for Strawberry Salsa:

Strawberry Salsa
2 plum tomatoes
2 cups hulled and diced
strawberries (½-inch dice, from about 3 cups whole strawberries)
2 tablespoons Balsamic Glaze (recipe below)
Juice of ½ lime
½ teaspoon seeded and finely
diced serrano chile
½ teaspoon salt
2 tablespoons finely chopped
fresh basil

Balsamic Glaze
½ cup balsamic vinegar
1 tablespoon pure maple syrup

Directions:
Whisk together the two ingredients and pour them into a small saucepan set over medium-high heat. Reduce the mixture until it is thick and syrupy, about 5 minutes.
