Spinach Onion Roll

Ingredients:
1 frozen puff pastry sheet
Olive oil
Margarine
1 large onion, chopped
10 – 12 oz of frozen spinach, defrosted and drained
3 TBSP flour
Salt and pepper
1 TBSP white or red wine
Egg or egg substitute for basting roll
Sesame seeds

Directions:
Take puff pastry sheet out of freezer and let thaw on counter for about 20 – 30 minutes. Meanwhile, saute a large chopped onion in olive oil and a little bit of margarine over medium heat, covered. When golden, add in drained spinach and flour and mix a bit. Then add salt, pepper, and wine and cook for 3 minutes, uncovered. Stretch the pastry sheet out a bit to make it longer and wider. Put it in a greased 9 x 13 pan. Pour spinach mixture down the center of the pastry sheet and press flaps on top to close. Flip roll onto cookie sheet so that the flaps are on the bottom side. Baste with egg and sprinkle on sesame seeds. Bake at 350 degrees for about 40 minutes or so or until golden.
