S’mores Oatmeal Cookies
This here is the ultimate cookie! The classic Quaker Oats Chewy oatmeal cookies stuffed with dark chocolate chips and mini marshmallows dusted with crushed graham crackers it’s a sugar junkies dream rolled up into one delicious treat.
1 cup butter or margarine, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1‑1/2 cups all‑purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups Large Quaker Flake Oats or Quick Quaker Oats (uncooked)
1 cup chocolate chip plus 1/2 cup
1 cup mini marshmallows
1/4 cup graham crackers crumbs
Heat oven to 350°F. In large bowl, beat butter and sugar until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats, chocolate chips and marshmallows; mix well. Drop dough by rounded tablespoonfuls onto parchment‑lined cookie sheets. Using the additional 1/2 cup chocolate chips, add more chocolate chips on top of each cookie. Sprinkle graham cracker crumbs on top. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
Bar Cookies: Press dough onto bottom of ungreased 13 x 9‑inch baking pan. Bake 30 to 35 minutes or until light golden brown.
Cool completely in pan on wire rack. Cut into bars. Store tightly covered.
Can I use marshmallow fluff instead of marshmallows?
Hi! Yes drop dollops of it on each cookie in place of marshmallows.
