Chicken with Gravy


1 lb boneless skinless chicken breasts, pounded thin (4 pieces)
1/2 t salt
1/4 t black pepper
1/2 t sweet red paprika
1/4 t cayenne pepper
1/2 t garlic powder
1/2 cup of flour
2 T oil
1 T earth balance
1 T flour
1 cup of chicken broth


Combine flour and spices. Dredge chicken in flour. Heat up a pan with 2 tablespoons oil then cook chicken until no longer pink and cooked through. Remove from pan and set aside. Add 1 tablespoon earth balance to pan and melt. Slowly add 1 tablespoon flour to pan and combine well until a paste forms. Add 1 cup of chicken broth to pan and stir together. Bring to a boil and cook for several minutes, stirring until thickens. Serve gravy over chicken with freshly chopped chives.
