Brown rice or quinoa, prepared according to package directions
1 lb ground beef (or turkey)
2-3 eggs (or 2/3 cup egg substitute)
2/3 cup cornflake crumbs (or bread crumbs)
Dried minced onion
Garlic powder, salt, pepper, and oregano
1 (15 oz) can of tomato sauce
1 can of jellied cranberry sauce
1/4 cup light brown sugar
1 tsp salt
Mix meatball ingredients together in a ziplock bag and form into balls.
Put a little canola oil in a pot and heat up. Lower flame to medium and put one layer of meatballs, then sauce and alternate between the two layers until you have the last layer of sauce on top. Cover and bring to a boil, then simmer covered for 2 hours.
