Southern Baked Chicken – Oven Fried Chicken!

I am a big fan of southern fried foods, I love when it’s crispy and crunchy and that usually means loaded with fat! This is a recipe I use when I am in the mood for a “crispy southern taste” without the calories! The chicken comes out crispy on the outside and juicy and tender inside. The BBQ sauce gives it a great flavor!

Ingredients:

Chicken pieces on the bone (chicken breast without the bone can be used as well)

Mayo (about half a cup)

BBQ Sauce (about half a cup)

Cornflake Crumbs

Pan to bake the chicken in

Directions:

Wash the chicken pieces and set in pan. Mix the BBQ sauce and Mayo in a bowl. Then spread the mixture on top of the chicken, covering all sides. After that cover the chicken with the cornflake crumbs. Make sure to put on a large amount so its thickly coated. Then cover the pan with silverfoil and bake for about an hour and a half on 350′ (remove the foil for the last 30 minutes if you want it to get crispy)

  • If you’re not into mayo, you can dip the chicken in a beaten egg before coating. I like to add seasoning to my breadcrumbs, too. I dust the baking sheet with breadcrumbs so my chicken doesn’t get any bald spots in the baking process.

  • Since I hail from the heart of Dixie, I have to say one thing about fried chicken: marinade the chicken in Sweet Tea with Lemon. Seriously, that will blow your mind. Also, in the tea marinade, a piece of rosemary will go a long way, too.

    Basically just used crappy Lipton tea, brew it a little on the dark side with a piece of rosemary in the hot water, add lots of honey and sugar then cool it down with ice in the fridge. Then add some lemon and use that as the marinade. Trust me, I live in the South. :-)

  • YUM! Thanks so much for this recipe! I tried Patrick’s idea and marinaded the chicken in tea before I put on the sauce. It came out soooo good :)
