Gluten Free Dairy Free Sausage Egg Muffins

Ingredients:
1 onion, diced
8 oz mushrooms, sliced
1 large pepper, diced
4 sausage, diced
6 eggs
6 egg whites

Directions:
Saute onions mushrooms and peppers until tender. Add sausage and cook until browned. Grease cupcake pan. Place 1 to 2 tablespoons sausage mixture in cupcake pan. Combine eggs and egg whites. Season with salt and pepper. Place egg mixture over veggies so they are covered. Cook in oven on 350′ for about 20 to 25 minutes.
