Roasted Brussels Sprouts with Pastrami Bits


2 lbs. brussels sprouts
6 oz. pastrami diced up
2 T olive oil
1 T balsamic vinegar (optional)

Wash and slice the brussels sprouts in half, lengthwise. Place on lightly greased baking sheet with pastrami. Toss with olive oil. Place in oven on 375′ for about 30 minutes or until slightly browned. (mix around every 10 minutes) Once cooked, dress with balsamic vinegar. Serve as a side to a meal or the main dish by placing poached or fried eggs on top.
