Donuts

For this recipe I used organic sugar and icing sugar and unnbleached white flour.
This way I felt less guilty indulging in this Chanukah treat. It came out delicious…enjoy and have a happy Chanukah to you and your family!

Ingredients:
11/2 Tbsp yeast
11/2 cups warm water
1 tbsp sugar
1 tbsp. Sugar
3 eggs
1/2 cup oil
1/2 cup sugar
1/2 cup rice (or almond or soy) milk
1 tsp. Vanilla extract
6 to 7 cups of flour
Oil for frying
Confectioners sugar
Chocolate bar or chips
Sprinkles

Directions:
Place the 11/2 Tbsp yeast, 1 and 1/2 cups warm water and 1 tbsp sugar in a small bowl and allow to stand several minute until bubbly. In a large mixing bowl place ingredients including yeast mixture, adding the flour in last. Knead dough until soft but not dry (it should be softer than challah dough. So don’t over mix and stop even if it feels a little sticky.) Cover and allow to rise until doubles in size, about 1 and 1/2 hours. Place 3 inches of oil or more if needed until half the dough gets covered. Heat oil in a 2 quart size sauce pan over a medium flame until hot. Make golf ball size balls or larger if you want and place in hot oil. Brown on one size and then flip dough and brown other side. Remove with slotted spoon and drain and cool on paper towels.

*To add jelly inside make a small hole in the donut and with a small spoon squeeze jelly inside. Then dust with confectioners sugar.
*For chocolate glazed donuts, melt good quality dark sweet chocolate (either a bar or chocolate chips)in a small pan on a low flame. mix constantly and be sure the heat stays low or the chocolate will melt with lumps. Drizzle over donuts and place on rack to cool and harden.
*For icing sugar glazed donuts, you place confectioners sugar in a small bowl and add water a little at a time until it is a thick paste. Drizzle on top of donuts.(and then dip in sprinkles.)
