Chocolate Chip Banana Crumb Muffins

Servings: 18 to 20 cupcakes

Muffin Ingredients:
3/4 cup margarine
1 1/2 cups of sugar
2 eggs
1 cup of mashed bananas (two bananas)
1/2 cup of apple juice
2 cups of flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
1 cup chocolate chips
Powdered sugar for serving

Crumb Topping Ingredients:
1 cup of flour
1 cup of light brown sugar
1/2 cup of margarine
1/4 teaspoon cinnamon

Directions:
Combine margarine, sugar and eggs. Add remaining ingredients and mix well. Using an ice cream scooper, fill cupcake holders 3/4 way to the top. Combine crumb topping ingredients using your hands to create the crumb texture. Top muffin cups with crumb topping. Optional, sprinkle a few extra chocolate chips on top. Bake on 350′ for 22 to 25 minutes. Allow to cool off then top with powdered sugar.
