Chicken Meatballs with Celery and Carrots:

These are great as is or can be served several on a skewer with your favorite dipping sauce.

Ingredients:
1 lb ground chicken thigh
2 carrots, shredded
2 stalks of celery, diced
1 egg
2 T finely chopped parsley

Directions:
Combine ingredients together. Shape into balls. Place on greased baking sheet and bake on 350′ for about 20 to 30 minutes or until cooked through. Makes about 28 chicken balls if using 1/2 Tablespoon measuring spoon.
