I asked people to send in their moms fav recipes in honor of Mothers Day and to also include a short tidbit on why she rocks. I posted our favorite one below, the recipe looks really tasty and easy to prepare. (also, peach is so great in the summer time!)

Now, this cake is the reason why MY mother rocks! To congratulate me on Kosher in the Kitch my mother surprised me with this fabulous cake. She is the one who taught me how to cook, even before I had the role of wifey I would spend time with her in the kitchen preparing tasty meals and delicious treats. So thank you mama for all the warm home cooked meals I had as a child, and the yummy snacks that were always waiting for us after school. Your cinnamon buns and chocolate babka are still my favorite desserts and I love the fact that I can always count on there being freshly baked chocolate chip cookies in your cookie jar! xoxo

Green Beans with Carrots:

This is my mother’s recipe. She makes this Fridays nights and it’s a great side dish to any kugel and chicken dish!

Ingredients:

-Green beans

-1 Carrot

- Salt & Pepper to taste

Directions:

Cut off the ends of the green beans, then put into a pot. Grate the carrot into the same pot. Add some salt and pepper to taste. Then add a bit of water and simmer for about 20 minutes until cooked.

Marshmallow Fluff Cake:

This is a family treat I grew up with! My mother got it from the back of the cereal box.

Ingredients:

-3 tablespoons margarine
-6 cupsĀ  of rice crispy cereal
-1 container of marshmallow fluff

Directions:

Melt the margarine in a pot then melt marshmellow in the same pot. Once it’s melted mix in the cereal. Pour into a 9×13 pan. Can serve it hot or let harden.

Sesame Teriyaki Salmon:

This was the first dish I ever cooked. It was about a couple of weeks after I got married and my husband was getting a bit annoyed of having to shlep to my moms for dinner every night, while my mother was upset I wasn’t using my brand new dishes she had so carefully selected for me. It was easier playing the role of wifey when I was getting mazol tovs and recieving gifts. Preparing dinner on the other hand, was a little more diffiult. In a panic I called my sister Tova and told her I had to make dinner and had no idea what to cook. Give me something good and give me something easy! (I didn’t think my confidence could handle a disaster the first night in the kitchen) I can’t remember her exact wording, but being that she is married almost 10 years with 4 boys, I am sure she must have laughed at my fear and told me to chill out. And then she gave me the following recipe.

Ingredients:

Salmon

Mikee’s Sesame Teriyaki Sauce (If you can’t find this at your local grocery store, then combine soy sauce with some teryaki sauce and add some sesame seeds if you would like)

Directions:

Place the salmon in a pan. Pour the sauce on top. Cover with foil and bake for about 20-25 minutes on 350′. I serve this with Near East couscous. (They have a large selection of flavorings and take less than 5 minutes to prepare. My favorite is the toasted pine nuts)

Mango Corn Salad:

This recipe was given to me by my friend Miera Martinez. She makes some great dishes!

Ingredients:

- 2 cans of corn

-cilantro chopped

-1 red onion diced

- 1 mango diced

-about 2 tablespoons of lime juice

Directions:

Place ingredients in a bowl and mix with the lime juice. Serve with salsa & guacamole and chips!

Tomato Salsa:

Ingredients:

- 4 Tomatoes diced

-1 Red Onion diced

- Cilantro chopped

-Lime Juice

-Salt & Pepper to taste

Directions:

Place the chopped cilantro, diced tomatoes and diced onion into a bowl. Add about 2 tablespoons of lime juice (taste to see if more is needed) then add salt and pepper to taste. Serve with chips and guacamole!

Short Grain Brown Rice:

Ingredients:

-Lundbgerg’s short grain brown rice

-Parsley flakes

-2 cloves of Garlic diced

-1 Onion chopped

-Salt & Pepper to taste

Directions:

Place 2 cups of the rice in a pot. Place the onion, garlic, parsley and salt and pepper inside the pot with the rive. Then add 4 cups of water. Bring to a boil then simmer till rice is cooked.
